Zesty, Chicken Garden Salad

With our garden beginning to overflow, it’s time to start utilizing the harvest!

The first thing to mature in our garden this year is the leafy lettuce.

Which ends up working fine, because a good salad is great for for lunches!

Although I tend to get tired of the same salads over time so I need to mix it up a bit every now and then.

This salad is super easy and packed full with flavor.

Zesty, Chicken Garden Salad

An easy salad packed full of flavor and utilizing garden fresh lettuce.

Ingredients

  

• 1 head lettuce
• 3/4 cup shredded carrots
• 1 cup rotisserie chicken, shredded
• 3/4 cup montery jack cheese can substitute for other favorite cheeses!
• 1/2 cup garlic flavored fried onions
• green onions optional, for garnish
• 1/2 cup Spicy Ranch Dressing

Method

 

1. Wash and chop lettuce. Divide lettuce into 4 serving bowls.
2. Divide shredded carrots and shredded chicken in salad bowls.
3. Top with shredded cheese, fried onions, and green onions (if desired).
4. Serve with dressing and enjoy!
